Summer Smoothie… Strawberry & Beetroot

Summer is finally here, so this gives us chance to get a little creative in the kitchen and enjoy lighter meals, therefore by adding a smoothie to your diet you are getting vital nutrients into your diet!

Debenhams are also running a Creative Smoothie Competition so I thought I would get a little creative with my ideas and put my entry forward!

So here it is… my Strawberry and Beetroot Smoothie

Yep, that’s right – Strawberry AND Beetroot in a smoothie. What’s more, it’s really good for you too, as Beetroot and almond milk are both super foods.

I love both Strawberries and Beetroot and you will find me adding them to all sorts of dishes – one of my key ways to use beetroot in chocolate cake to reduce various nasties such as calories and fat (more on that later!)

You’ll need:

  • 1 banana, sliced into chunks (ideally frozen in advance)
  • 1 heaped cup sliced strawberries (again, frozen is best)
  • 2 1/2 large steamed beetroot (allowed to cool)
  • 1 heaped teaspoon flax seed (I use Linwoods)
  • 1 cup almond milk

Combine all the ingredients in a blender until smooth. That’s it! If it is a little too thick, just add a bit more almond milk.

Job done!

Serve, sit in the sun and enjoy!
